RECIPE of the Day - 6/06/2007



Our daughter hasn't developed a taste for coconut yet, but my husband and I love it. This is a really great cake - delicious and pretty as well. It also keeps quite well in the fridge for a few days, if it lasts that long!







Toasted-Coconut Refrigerator Cake

1/4 cup flaked sweetened coconut
2 cups Vanilla Pudding
1 cup heavy (or whipping) cream, whipped to a soft peak
2 pound cakes (such as Sara Lee), about 11 ounces each

Preheat oven to 350° F. Spread the coconut on a baking sheet and toast in oven until golden, about 10 minutes, shaking the tray once about halfway through the cooking time. Remove and let cool. In a medium bowl, gently fold together the whipped cream and pudding. Slice each cake vertically in half, then slice each half horizontally into three ½-inch layers. Line an 8-by-8-inchsquare pan with 4 slices of cake to make 1 layer. Top with about 1cup of the pudding mixture, spreading to cover the cake. Repeat the process to form 3 layers, ending with the pudding mixture. Refrigerate for 1 hour. Garnish with the toasted coconut and serve.

Yield: Makes 6 to 8 servings

Chinese-Made Toothpaste Warning

The FDA warned consumers not to use toothpaste made in China after regulators found some brands contained a poisonous ingredient also found in antifreeze.

Officials say they have identified at least 16 brands of imported toothpaste potentially containing diethylene glycol, a chemical that can be used as a sweetener and thickening agent but that is toxic to humans.

None of the brands is widely distributed in the U.S.; regulators say they are sold primarily at discount stores. Officials say they have not received reports of any U.S. consumers injured by the contaminated toothpaste.

Debora Autor, the FDA's director of compliance, urges consumers to check the labels of toothpaste in their medicine cabinets to see if it indicates Chinese origin.

The FDA recommends that consumers should throw away toothpaste with that labeling," Autor says.

Some of the contaminated brands include the chemical in their labels under the names "diethylene glycol," "diglycol," or "diglycol stearate." But others have no mention of the chemical on their packaging, the agency says.

Autor says contaminated toothpaste has been recovered from a Dollar Plus store in Miami as well as from an outlet called Todo a Peso in Puerto Rico.

Taco Bell Hoax

I told Rob that I would post this because of the enormity of the hoax. It is on just about every site I gather freebies from. Sorry for the confusion, but Taco Bell is a great place to eat, so how about Taco Bell for lunch or dinner?

Food Has No Calories If...

You eat it while standing.

Empty calories = zero calories!

Always eat equal portions of white chocolate and dark chocolate.
The calories in each will cancel the other out.

The chewier the food, the more calories you work off chewing it, so taffy has no calories if you think about it.

And don't forget...a box of Fiddle-Faddle only weighs 4.25 ounces so even if you eat the entire thing in one sitting the worst that can happen is you'll gain about a quarter of a pound! ;-)

An Organized Kitchen

The Strategies

Keep necessities within easy reach. You don’t want to waste precious time during dinner prep looking for things. Make a place in the hot zone (around the stove and the sink) for the essentials: oil, vinegar, knives, cutting board. Move special-occasion cookware, like a fondue pot, out of cabinets in the zone so what’s left can be neatly organized and easily spotted. Ask not where ingredients and tools fit; ask where you will be using them. Keep the basket of potatoes near the cutting board, sugar and flour near the stand mixer, and your best-loved pan on the front burner.

Use under-cabinet space. Under-cabinet lighting strips (attached with screws or double-stick Velcro) keep the focus on the onions at hand. A battery-operated version won’t dangle a cord or steal an outlet from the microwave. An under-shelf cookbook holder pulls down when you need it and folds back up when you don’t.

Put the walls to work. Don’t let them just sit there. Put up racks or pegs to keep favorite utensils, the dinner recipe, pot holders, and dish towels in plain sight. Oversize Post-it notes or hanging rolls of paper are useful for all kinds of reminders.

Make recycling efficient, too. Having a bin for bottles and cans right next to the one for regular trash, instead of out in the garage or in the mudroom, streamlines end-of-meal cleanup.

The Tools and Tactics

Utensil jug. When it comes to keeping essential tools handy and visible, there have been few improvements on this age-old catchall.

Things get lost on deep shelves. Try putting them in baskets that you can pull out and inspect at eye level.

Paper roll. Hang a roll of paper (found at stationery and art-supply stores) for service as a tear-off shopping list or a bulletin board for notes to yourself and your family.

Mini-Prep Processor. This is a real time-saver if your favorite dishes typically call for things like chopped garlic, onions, and parsley.

Under the cabinets. Tap into this underused space and add lighting or a cookbook holder.

Under-cabinet cookbook holder. Clear acrylic. Flips up out of the way when not in use.

Wood cookware rack storage stand. Keep pot lids tidy in cupboards.

RECIPE of the Day - 6/05/2007


This is sooooooo good. It is normally served during the holidays, but it is great for any time of year. This is very rich and very delicious, but don't be too generous with the servings.





Zuccotto

1 10- to 12-ounce store-bought pound cake
1/4 cup orange juice or orange liqueur
1 6-ounce bag semisweet chocolate chips, chopped
2 cups heavy or whipping cream
1/2 cup sugar
1 teaspoon almond extract
1 cup slivered almonds, chopped

Cut the pound cake into 1/2-inch slices, then diagonally cut each slice in half. Line a 3-quart mixing bowl with plastic wrap.Arrange the cake pieces with the pointed ends at the bottom and crust sides next to cut edges until the bowl is lined. Sprinkle with the orange juice. Set aside the remaining cake pieces.

In a microwave, melt half the chocolate in a small cup on high, 1 minute. Stir until smooth. In a mixing bowl, beat the cream, sugar, and almond extract until stiff peaks form. Fold in the chopped almonds and the remaining chocolate chips. Spread this cream mixture around the cake-lined bowl, leaving a well in the center. Mix the melted chocolate into the remaining whipped cream, then use that to fill the center of the dessert. Top with the remaining cake pieces.

Cover with plastic wrap and refrigerate overnight or up to 2 days ahead. When ready to serve, turn the cake out onto a platter and slice in wedges.

Makes 10 servings
472 calories per serving.

Deodorize Shoes with Dryer Sheets

Original Purpose: Softening clothes and reducing static cling.
Use: Refreshing smelly shoes and sneakers. Put half a scented Bounce sheet in each shoe.
Reward: Shoes that smell April fresh.

Remove Adhesive with Oil

Original Purpose: Frying and baking.
Use: Removing adhesive from glass. Apply cooking oil to the sticker using a paper towel or a soft cloth, rub firmly, then rinse with warm, soapy water. (If the adhesive is stubborn, use a dab of toothpaste along with the oil.)
Reward: Getting all the stickers off your glass products without buying the expensive preps.

Car Wax as Fixture Polish

Original Purpose: Giving your car a beautiful shine.

RECIPE of the Day - 6/04/2007


This is a vegetarian recipe that I really love. It has a wonderful flavor with all the veggies, herbs and cheeses. It is hearty, even though it is vegetarian, and is really great when served with a nice, buttery garlic bread.



Vegetarian Ziti Gratin

3 tablespoons olive oil
1 onion, thinly sliced
4 garlic cloves, peeled and sliced
1 small bay leaf
1 small eggplant, cut into 1/2-inch pieces (about 3 cups)
1 small zucchini, halved lengthwise and cut into thin slices
1 red bell pepper, cut into slivers
4 plum tomatoes, coarsely chopped (about 1 1/4 cups)
2 teaspoons kosher salt
1/2 cup shredded fresh basil leaves
Freshly ground black pepper
1 pound ziti
15-ounce container ricotta cheese
2 eggs, beaten
2 tablespoons olive oil
1/2 cup grated Parmesan
1 cup shredded Cheddar

Over medium-low heat, add the oil to a large skillet with the onion, garlic, and bay leaf, stirring occasionally, until the onion has softened. Add the eggplant and cook, stirring occasionally, for 8 minutes or until the eggplant has softened. Stir in the zucchini, red bell pepper, tomatoes, and 1 teaspoon salt, and cook over medium heat, stirring occasionally, for 5 to 7 minutes or until the vegetables are tender. Stir in the basil and a few grinds of pepper to taste.

Cook ziti according to the label directions. Drain the ziti, then toss with ricotta cheese, eggs, olive oil, Parmesan, and 1 teaspoon salt. Spoon half the ziti into a lightly greased 4-quart casserole. Top with the ratatouille and then the remaining ziti. Sprinkle with Cheddar. Cover and bake in a preheated 350º F oven for 20 minutes. Uncover and cook 10 minutes more.

4 servings
1002 calories per serving

Surprising Items for Household Cleaning

Mesh Veggie Bag as Pot Scrubber

Original Purpose: Packaging for potatoes, onions, and tomatoes on the vine.
Use: Scrubbing up after dinner. Cut ends open, scrunch, add soap and water and be amazed at how well it works.
Reward: After an especially messy clean-up, you can throw this scrubber away.

Dust Lamp with Lint Roller

Original Purpose: Getting the white cat hair off your black sweater.
Use: Dusting a lamp shade. Run the roller up and down the outside to get rid of the lint and dust; especially difficult with pleated shades.
Reward: A perfectly clean lamp shade that doesn't make you sneeze.

Remove Food Stains with Lemon

Original Purpose: Cooking and flavoring beverages.
Use: Removing tough food stains from light wood and plastic cutting boards. Slice a lemon in half, squeeze onto the soiled surface, rub, and let sit for 20 minutes before rinsing.
Reward: A house that smells like fresh lemons.
Other Use: Washing up after eating or cooking fish. Rub lemon on your hands and rinse.

Baking Soda as Silver Polisher

Original Use: Making cakes rise.
Use: Polishing silver. Wash tarnished items, then place on aluminum foil in the bottom of a pot. Add the baking-soda solution (1/4 cup soda, a few teaspoons salt, 1 quart boiling water) to cover for a few seconds.
Reward: A chemical reaction that gets the tarnish off of your silver products without all the scrubbing, especially detailed pieces.

Sop Up Spilled Egg with Salt

Original Purpose: Boosting flavor.
Use: Sopping up a spilled egg. Heap a handful of salt on the mess, leave for two minutes or so, then wipe up.
Reward: The egg sticks to one paper towel instead of sliding off five or six.

Use Coasters to Catch Drips in Pantry

Original Purpose: Keeping wet glasses from making rings on your wooden tables.
Use: Catching drips that might come from bottles and jars in cupboards.

This is one of those recipes that makes me very proud of my Italian ancestry (though generations back). It has the most wonderful flavor and the aroma beckons everyone to the dinner table.

Tuscan Pot Roast

1/3 cup olive oil
1 2 1/2- to 3-pound bottom-round pot roast
2 large onions, quartered
2 celery stalks, thinly sliced (2 cups)
2 large carrots, thinly sliced (2 cups)
3 garlic cloves, minced
1 6-ounce can tomato paste
1 cup dry red wine
1 1/2-ounce package dried mushrooms (such as portobello)
1 tablespoon kosher salt
1 teaspoon dried oregano
1 28-ounce can whole plum tomatoes, chopped, liquid reserved

Heat the oil in a large skillet over medium-high heat and brown the roast on all sides. Transfer the roast to a heavy casserole. To the fat remaining in the skillet, add the onions, celery, carrots, and garlic. Cook, stirring frequently, until tender, about 10 minutes. Add the tomato paste and stir to coat the vegetables; transfer to the casserole. Pour the wine into the skillet and scrape up any browned bits; add the contents of the skillet to the casserole, along with the mushrooms, salt, oregano, and tomatoes (plus 1 cup of their liquid). Cover the casserole and cook in a 300° F oven for 3 hours or until the meat is very tender, adding more of the tomato liquid if necessary.

Makes 6 to 8 servings

Preparing for the New Cat

Take cold chicken and stars soup straight from the can and splash it across the carpet and the foot of the bed and then walk in it in the dark with your socks on.

Set up a mouse trap at the foot of the bed each night so that if you move a toe one inch while you are sleeping, you are sure to get snapped.

Cover all your best suits with cat hair. Dark suits must use white hair, and light suits must use dark hair. Also, float some hair in your first cup of coffee in the morning.

Put everything cat-toy-sized into a water bowl to marinate.

Practice cutting your chicken into teeny tiny bites so that when the cat steals from your plate, he won't take the whole breast.

Tip over a basket of clean laundry, and scatter clothing all over the floor. Leave your underwear on the living room floor, because that's where the cat will drag it anyway (especially when you have company).

Jump out of your chair shortly before the end of your favorite TV program and run to the TV, shouting "No! No! Don't chew on the electric cord!" Miss the end of the program.

Gouge the surface of the dining room table several times with an X-acto knife. It's going to get scratched anyway.

Practice searching every closet and open cabinet door before you shut it.

Knock all small items off your kitchen counter.

Chew the eraser off every pencil in the house.

Take a fork and shred the roll of toilet paper while it's still hanging up. Pull a few sheets off and scatter them around the bathroom.

Take a staple remover and punch two holes in every scrap of paper around the house.

Buy a mixed bag of cat toys and stuff them under the refrigerator. Practice getting up at 2AM and fishing them out with a ruler or broom stick.

Take a warm cuddly blanket out of the dryer and immediately wrap it around yourself. This is the feeling you will get when your new cat falls asleep on your lap.

There now, once you've done all these, you've passed the test, and are ready to take on that little furry critter!

Cleaning Household Surfaces

How to Clean Slate

Use: A few drops of dishwashing liquid and warm water.
Tools: A soft cloth, sponge, or mop.
Tips: Sweep or vacuum regularly. After cleaning, dry thoroughly with a clean cloth. Apply a penetrating sealer, available at stone dealers and home centers, to countertops and floors every two years to prevent deep stains. Don't use abrasive cleansers, vinegar, or lemon-based cleansers.
Tough Stains: To remove soap scum, clean with ammonia and water (a half-cup of ammonia to one gallon of water).

How to Clean Solid Surfacing (Corian, Avonite)

Use: A few drops or a spray of all-purpose cleanser.
Tools: A damp sponge, cloth, or soft nylon pad or brush.
Tips: Occasionally wipe matte-finish sinks with a solution of one teaspoon nonchlorine bleach and one quart hot water.
Tough Stains: Rub matte finishes with a dampened green Scotch-Brite pad and baking soda. For satin finishes, use a white Scotch-Brite pad and undiluted all-purpose cleanser. For high-gloss finishes, use a one-part-vinegar to one-part-warm-water solution and a soft cloth.

How to Clean Stainless Steel

Use: Four tablespoons of baking soda dissolved in one quart of water.
Tools: A soft cloth.
Tips: Wipe dry with a clean cloth and polish with a dry cloth. Immediately wipe up acidic spills, like lemon and tomato, which can discolor the finish. Don't use abrasive cleansers or bleach, which can pit the surface.
Tough Stains: Remove streaks and water spots with a cloth dampened with isopropyl alcohol let air-dry.

How to Clean Vinyl Flooring

Use: One-half cup of ammonia per gallon of water.
Tools: A soft cloth or mop.
Tips: Sweep or vacuum frequently. Don't use detergents, abrasive cleansers, mop-and-shine products, or paste wax, all of which leave a film on the shiny, waxlike finish applied by the manufacturer.
Tough Stains: Rub scuff marks with a nylon pad, sponge, or soft nylon brush dampened with the ammonia solution or isopropryl alcohol.

How to Clean Soapstone

Use: A few drops of dishwashing liquid or all-purpose cleanser and warm water.
Tools: A soft cloth or sponge.
Tips: Rub with mineral oil every couple of weeks during the first year to help the stone oxidize (darken) evenly. Oil every two months after that.
Tough Stains: Soapstone resists water, chemicals, and acids, so it rarely stains. Small scratches can be removed with fine sandpaper.

I know they have a lot more calories, but pasta dishes with cream sauce are my very favorite way to eat pasta. They are rich, delicious and filling. Try a nice garlic, parmesan, herb bread with this one... delicious!







Pasta with Cream Sauce

1 pound dried pasta
1 1/2 cups heavy cream
1/2 cup whole milk
1 T. fresh chives
1 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
1 cup (4 ounces) grated Parmesan

Cook the pasta according to the package directions.

In a large saucepan, over medium-low heat, warm the cream, milk, salt, and pepper. Add the cooked pasta and Parmesan and stir until the cheese melts and the sauce thickens, 2 to 3 minutes.

Makes 4 servings

Washington
•"It shall be unlawful for a candidate for office or for nomination thereto whose name appears upon the ballot at any election to give to or purchase for another person, not a member of his or her family, any liquor in or upon any premises licensed by the state for the sale of any such liquor by the drink during the hours that the polls are open on the day of such election."
• A law to reduce crime states: "It is mandatory for a motorist with criminal intentions to stop at the city limits and telephone the chief of police as he is entering the town."
• All lollipops are banned.
• An old Washington law sent duelists to jail for ten years, assuming they didn't lose the duel.

How to Clean Marble

Use: A few drops of dishwashing liquid and warm water.
Tools: A cloth, sponge, or mop.
Tips: Sweep or vacuum floors regularly. Wipe up spills with a clean, soft cloth. Apply a penetrating sealer, available at stone dealers and home centers, every year to prevent deep stains. As with limestone, don't use abrasive cleansers, vinegar, and lemon-based cleansers.
Tough Stains: Use a ready-made poultice, available at stone dealers.

How to Clean Mirrors

Use: Plain water.
Tools: A microfiber cloth.
Tips: For extremely dirty mirrors, make a solution of one part vinegar to one part warm water and use a squeegee. Keep water or the vinegar solution away from the edge of a mirror; moisture can seep behind the glass and cause damage.
Tough Stains: Rub tough streaks with crumpled newspaper and the vinegar solution.

How to Clean Plastic-Laminate Countertops and Cabinets

Use: A few drops or a spray of all-purpose cleanser.
Tools: A dampened sponge, cloth, or soft nylon pad or brush.
Tips: Rinse with a clean, damp cloth after wiping with all-purpose cleanser. Don't use a dripping-wet cloth near seams. Don't use abrasive cleansers, steel wool, or stiff brushes, which can scratch the finish.
Tough Stains: Apply undiluted all-purpose cleanser, let stand, then blot with a dampened cloth.

How to Clean Plastic-Laminate Flooring

RECIPE of the Day - 6/01/2007




These are such yummy roll-ups. They're great for lunch, dinner or snacks. The flavor is really wonderful and kids love them.









Roll-Ups with Bacon, Peas, and New Potatoes

1 pound new potatoes, scrubbed and cut into ½-inch pieces
8 white corn tortillas
1 tablespoon butter
6 slices bacon, cooked and crumbled
1 cup frozen peas, thawed and drained
1 teaspoon fresh thyme leaves or 1/3 teaspoon dried
2 scallions, thinly sliced
1 cup sour cream
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Preheat oven to 300°F.

Place the potatoes in a medium saucepan on high heat with enough water to cover them. Cook 15 to 18 minutes, until soft. Drain in a colander; set aside.

Meanwhile, wrap all the tortillas tightly together in foil and place in oven for 5 minutes. Place the saucepan back on low heat and add the butter and bacon. Stir until warm and sizzling, about 2 minutes; remove from heat. Add the potatoes, peas, thyme, half the scallions, and half the sour cream. Stir and mash with a potato masher or a wooden spoon. Season with the salt and pepper to taste.

Remove the tortillas from oven and place 2 on each plate. Put 1/3 cup of the potato mixture on each tortilla and roll up. Top each with a spoonful of the remaining sour cream and sprinkle with the remaining scallions and a few grinds of black pepper.

Makes 4 servings
