RECIPE of the Day - 2/02/2007


Here is another quick, easy recipe for you. This is really delicious with the bacon and onion with chive cream cheese. Be sure to use real butter, though, for a really rich taste.


Bacon Wrapped Chicken

6 boneless skinless chicken breast halves
1 carton (8 ounces) whipped cream cheese with onion and chives
1 tablespoon butter or margarine, cubed
Salt to taste
6 bacon strips

Flatten the chicken to 1/2-in. thickness. Spread 3 tablespoons cream cheese over each. Dot with the butter and sprinkle with salt; roll up. Wrap each with a bacon strip.
Place, seam side down, in a greased 13-in. x 9-in. x 2-in. baking pan. Bake, uncovered, at 400 degrees F for 35-40 minutes or until juices run clear. Broil 6 in. from the heat for 5 minutes or until bacon is crisp.
