RECIPE of the Day - 4/02/2007



This has been a very warm spring from the start and looks like it will just get warmer from here. This is a real treat for those warm (or hot) days ahead. You can serve it as a salad or have it as a dessert. If you would like even more flavor, use a small package of flavored jello and omit the sugar.




Heavenly Frozen Fruit Salad

1 t. unflavored gelatin
2 T. lemon juice
3 oz. cream cheese
1/4 C. mayonnaise
1/4 t. salt
2 T. sugar
1/2 C. cream, whipped
1/4 C. chopped nuts
1/4 C. maraschino cherries
1 (16 oz.) can fruit cocktail

Sprinkle gelatin over lemon juice to soften. Stir over hot water until dissolved. Combine cream cheese, mayonnaise, salt and sugar; add gelatin mixture and mix well. Fold in the rest of the ingredients and pour into freezing tray. Freeze at least 3 hours before serving.

Serve 6
