RECIPE of the Day - 3/11/2007

If you like spicy food, cajun is definitely the way to go. Living so close to Louisiana, we have a lot of cajun food here, and this is an especially good recipe for pork. For a really good side dish, try oven roasted potatoes or a good rice pilaf.


CAJUN PORK ROAST

2 lb. boneless pork loin roast
1 tbsp. cooking oil

SEASONINGS:

3 tbsp. paprika
1/2 tsp. cayenne pepper
1 tbsp. garlic powder
2 tsp. oregano
2 tsp. thyme
1/2 tsp. salt
1/2 tsp. ground white pepper
1/2 tsp. cumin
1/4 tsp. nutmeg (optional)

Rub pork loin with oil. Combine seasonings in bowl and then rub onto the meat.

Place in shallow pan. Bake 1 hour in a 350 degree oven. Rest 5-10 minutes before slicing.

Serves 4-6
