RECIPE of the Week - 10/31/2006

Decadent Triple Layer Mud Pie

3 squares semi-sweet baking chocolate, melted
1/4 C. sweetened condensed milk
1 oreo pie crust - 6 oz.
1/2 C. chopped pecans
2 C. cold milk
2 pkg. (4 svg. size each) instant chocolate pudding
8 oz. tub whipped topping, thawed & divided

Pour milk into large bowl. Add dry pudding mixes. Beat for 2 minutes or until well blended. (Mixture will be thick.) Spoon 1 1/2 C. of the pudding over the pecans in the chocolate crust. Add half of the whipped topping to the remaining pudding; stir until well blended. Spread over pudding layer in crust; top with remaining whipped topping. Refrigerate 3 hours.

Makes 10 servings.

Note: You may also top the whipped topping with chocolate curls. To make chocolate curls, you run a vegetable peeler over baking chocolate. Keep the curls refrigerated until you have enough to cover the pie.

A Doctor goes above and beyond


This past spring, I was an outpatient at a medical center in Denver. It was a Friday and I was there for my final doctor visit as a follow-up to minor surgery that I'd had two days before. During my exam, my doctor noticed that I seemed to be having more trouble breathing. I said I was, but I thought it was a normal reaction to the surgery. A few minutes later, an x-ray showed that my left lung had collapsed, so he said, "I'm sorry, you can't go home, I must check you in to the hospital immediately.”

I then remembered that I hadn't yet packed my bags back at the hotel -- my clothes and toiletries and medications were still in drawers or spread all around the room. So I asked if I could just go to the hotel to check out and bring my luggage to the hospital. My doctor said, "No, I'm afraid I can't let you do that."

I was dismayed, and fretted that I'd now be paying for the hotel room and the hospital room -- on top of a flight change fee! My doctor didn't even hesitate. He said, "I'll go check you out." I looked at him, astounded. Here he was, a very busy specialist at one of the premier medical and research centers in the United States, and he's going to go pack my bags for me?!! Surely, he would send an assistant? But no, that's exactly what he did. He picked up my purse and jacket (he didn't want me carrying anything) and walked me up to the patient ward, checked me in and made sure I was being taken care of, then he drove to the hotel, located everything to pack my bags, paid the maid's tip, and brought my luggage back to me.

A lot of people talk about how impersonal or uncaring doctors are these days. Not mine! I will never forget his caring, kindness and compassion that day. (And, by the way, the supervisor I spoke to at the airline was equally compassionate -- he waived the $100 fee without a note from a physician and said to just get well and call them whenever I was ready to go home.)

RECIPE of the Week - 10/23/2006

This is a recipe that my Great-Grandmother used to make for us all the time. It is a very moist cake with a subtle lemon flavor and is topped with a lemony glaze. You don't really taste the apricot, but it is a delicious cake.


Apricot Nectar Cake

1 pkg. lemon cake mix
1 box lemon jello
1/2 C. sugar
3/4 C. butter - no substitutions
1 C. apricot nectar
4 eggs

Preheat oven to 350 degrees. Mix the first 5 ingredients together and then add eggs 1 at a time until mixed well. Grease and flour a 13 x 9 pan. Pour batter into pan and bake for 1 hour, or until done. Make sure and check cake after 40 minutes.

Lemon Glaze

1 1/2 C. powdered sugar - double sifted
4 T. lemon juice - fresh and strained

Sift powdered sugar into a bowl and slowly add the lemon juice, mixing well. Pour over cake while hot.

We usually get about 12 servings out of this cake.

Angel in Disguise


Random acts of kindness are rare events that happen. For example, a few weeks ago I was at the pharmacy getting some prescriptions filled, and out of nowhere a lady walked up to me and handed me twenty dollars. I told her that I couldn't take the money. She told me that the Lord had laid it on her heart to give me the money, and in her heart she believed that it was the right thing to do. I thanked her for the money. When I got to the counter to pay for my prescriptions, I didn’t have enough money in my pocketbook to pay for it, so the twenty dollars that the lady had given me came in handy. I went outside to find her so I could thank her again. I couldn’t find her. I asked the man sitting on the bench if had saw her. He looked at me funny and said that no one had walked in or out since I had walked. I will never forget the kindness that the lady showed me that day.

RECIPE of the Week - 10/16/2006

Spiced Apple Cider

1/2 gallon apple cider
1 C. sugar
2 t. whole cloves
1 whole nutmeg
2 C. orange juice
1/2 C. lemon juice
cinnamon sticks

Combine apple cider and sugar in a dutch oven. Tie cloves and nutmeg in a cheese-cloth bag; add to cider mixture. Bring to a boil, reduce heat and simmer for 15 minutes. Remove the spice bag and add juices. Simmer until heated. Serve with cinnamon sticks for stirrers.

Makes 2 1/2 quarts
125 calories per cup

Makes a great accompaniment for pumpkin cheesecake!

The Miracle of a Child


To have a child is a blessing from God.
It is a true miracle for my husband and I because I was supposed to have had a hysterectomy the year before I became pregnant with our daughter. I had a lot of scar tissue that had formed around the uterus and had suffered through 2 miscarriages(one being twins). My doctor was a christian and said the only way for us to not have to do a hysterectomy is if I can say the Lord has been here, it's a miracle. After the surgery, he told me those very words. Five months later, I was pregnant with our daughter. The Lord is always there, in control. He still performs miracles if we will just open our eyes and our hearts to them. Believe and receive.
