RECIPE of the Day - 2/08/2007





These were my very favorite cookies when I was a kid; I loved to make them. If you haven't tried these, they are like a spice cookie with raisins. They are very similar to Raisin Rocks. As my daughter says Mmm, Good Stuff!





SPICY HERMIT COOKIES

1/2 c. shortening
1 c. brown sugar
1 egg
1 1/2 c. sifted flour
1 tbsp. instant coffee
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 tbsp. water
3/4 c. raisins
3/4 c. chopped nuts

Cream together shortening and brown sugar. Add egg; beat well.
Sift together dry ingredients; add alternately with water. Stir in raisins and nuts.
Drop from teaspoon on ungreased cookie sheets, 2 inches apart. Bake 8-10 minutes in 350 degree oven.
Cool slightly before removing from pan.
