RECIPE of the Week - 11/07/2006

This was one of our best sellers at the bakery my mother and I owned in the '80's. It tastes just like pecan pie in a convenient little bar. The crust is buttery and will melt in your mouth!

Pecan Pie Bars

Crust:
2 C. flour
1 C. brown sugar
1/2 C. crisco
1/2 C. butter
1/2 t. salt
1 egg yolk
1 t. vanilla

Filling:
4 eggs
3/4 C. sugar
1 1/4 C. dark corn syrup
1/2 C. melted butter
1/2 C. flour
1 t. vanilla
2 C. pecans, chopped

Heat oven to 350 degrees. In large bowl, combine all crust ingredients; blend well. Press in bottom of ungreased 13x9x2 pan. Bake 12-15 min. or until golden brown. Set aside.

In medium bowl, combine eggs & sugar. Stir in corn syrup & butter; blend well. Mix in flour & vanilla; add pecans. Pour filling over warm crust. Bake 18 - 20 min. Filling will set as it cools.
