RECIPE of the Day - 6/17/2007



This is a great recipe for cookies that are buttery and delicious with a slight citrus flavor. They will melt in your mouth.




Grandma's Cookies

1/2 C. unsalted butter, softened
3/4 C. confectioners' sugar
1 egg
1 t. pure vanilla extract
1/2 t. lemon extract or grated lemon zest
1 1/2 C. all-purpose flour
1/4 t. baking soda
1/2 t. cream of tartar
1/4 t. salt

Mix together the flour, baking soda, cream of tartar and salt; set aside. Cream the butter and confectioners' sugar together with mixer for 5 minutes or until light and fluffy. Add the egg, vanilla extract and lemon extract or zest and mix well. Add the flour mixture gradually and stir only until blended.

Divide the dough in half and chill for at least an hour. Take 1 half out at a time and roll out on a lightly floured surface to 1/4" thickness. Cut with cookie cutters or make your own designs free hand and cut out with a sharp knife. Place cookies 1" apart on a parchment lined cookie sheet. Bake at 375 degrees for 8 to 10 minutes or until lightly brown around the edges.

Repeat with other half of dough. You can decorate the cookies with sprinkles, icing or candies.
