RECIPE of the Day - 6/21/2007




This is a delicious chicken salad that can either be eaten in sandwich form or scooped into avocado halves and served with fresh fruit on the side.





Chicken and Fruit Salad

1 chicken
1 can fruit cocktail in heavy syrup
1 cup Miracle Whip or poppy seed dressing
¼ cup juice from fruit

Roast chicken until tender and allow to cool in broth, then place in refrigerator to chill. When it is chilled, remove the meat from the bones and cut in coarse pieces. Drain the fruit, reserving the juice to add to the salad dressing. Dice the fruit (if it is in large pieces) and add to the chopped chicken. Add fruit juice to salad dressing and mix lightly with chicken and fruit.
