RECIPE of the Day - 2/11/2007



My stomach may not always agree with me, but I love cajun food (actually, I love all spicy food!) This is spicy, but not extremely hot - just really tasty. If you want to tone down the heat a little, use a sprinkle of cayenne instead.





CAJUN CHICKEN BREASTS

Boneless chicken breasts
1 tbsp. butter

CAJUN SEASONING MIX:
1 tbsp. paprika
1 tsp. oregano
1 tsp. thyme
1/2 tsp. salt
1/4 tsp. cumin
1/8 tsp. cayenne

Melt butter and spoon over chicken, sprinkle with Cajun seasoning mix and grill (15 or 20 minutes). You can also just bake the chicken at 400 degrees for 25 minutes.

Save remainder of Cajun seasoning mix and try with grilled pork chops.
