RECIPE of the Day - 2/12/2007























Scallops are one of my favorite seafood entrees. They are so versatile and they are always delicious no matter how you prepare them. These are truly spectacular with the bread crumbs and parmesan cheese.


SANDRA'S MARINATED - BROILED SCALLOPS

1 lb. bay scallops
1/2 c. white wine
1/4 tsp. garlic powder
Juice of 1/2 lemon
Sprinkle of parsley (fresh or dried)
Sprinkle of Italian flavored bread crumbs
Grated Parmesan cheese

Mix wine, garlic powder, lemon juice and parsley.

Place scallops in pyrex baking dish (shallow). Pour wine mixture over top of scallops. Marinate scallops in mixture at least half an hour.

Sprinkle bread crumbs and Parmesan cheese over top of scallops and wine mixture. Broil for 8-10 minutes. Especially good served over wild rice.
