RECIPE of the Day - 2/15/2007




If you love loaded baked potatoes, then you will love this casserole. It has everything all together in one dish. It is so versatile, you can use it to accompany poultry, pork or beef.




BAKED POTATO CASSEROLE

4-6 med potatoes (wedges)
2 tbsp butter
1 tsp minced garlic
2-3 green onions (chopped)
1/2 cup black olives (chopped)
1/2 cup bacon bits
1 tsp chives
1 cup cheese of your choice (shredded)
1 container of sour cream - 8 oz.

Boil potatoes until tender; drain and set aside.
Saute butter and garlic in large skillet; add potatoes and toss to coat.Put potatoes in baking dish; layer all ingredients except for the sour cream.
Bake at 350 degrees until cheese is melted.
Serve with sour cream on the side and garnish with chives.
