RECIPE of the Day - 3/04/2007


These are the best fried potatoes you will ever have. I always use bacon grease when making these (of course I call them hash browns.) Once again, not for the calorie counter, but a great indulgence once in a while.





FRIED IRISH POTATOES

6 med. potatoes
1 lg. onion
Salt and pepper
1 c. bacon grease

Peel and wash potatoes. Dice potatoes. Wash and drain well.

Heatbacon grease in skillet until quite hot. Add potatoes to hot grease. Add salt and pepper and cover.

Cook at medium heat for about 15 minutes. Add the diced onions and cover and cook about 15 more minutes.

Remove cover for the last 5 minutes of cooking so potatoes won't get soggy.
