RECIPE of the Day - 3/13/2007




Chicken, mushrooms, butter, half & half and parmesan - what could be better? This is a tremendous recipe! Enjoy.



CHICKEN FETTUCCINE ALFREDO

12 oz. fettuccine
1/4 lb. fresh mushrooms
3 green onions
2 tbsp. butter
1 c. half and half
1 c. frozen peas
2 1/2 c. cooked chicken
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. Parmesan cheese

Fettuccine - cook according to package directions and drain. Quarter mushrooms. Saute onions and mushrooms until tender, but not browned. Add half and half; simmer. Add peas, chicken, salt and pepper. Heat through. Pour over fettuccine and top with cheese.
