RECIPE of the Day - 3/26/2007







These apricot bars are perfectly spiced and moist. The apricot icing adds extra flavor and sweetness to make a great bar cookie.






Spiced Apricot Bars

1 C. flour
1/2 t. baking powder
1/4 t. baking soda
1/4 t. ground cardamom (or cinnamon)
1 slightly beaten egg
1/2 C. packed brown sugar
1/2 C. apricot nectar (or orange juice)
1/4. C. applesauce
2 T. cooking oil
1/2 C. finely snipped dried apricots
1 recipe Apricot Icing

Preheat oven to 350 degrees. Stir together flour, baking powder, baking soda and cardamom; set aside. Stir together egg, brown sugar, apricot nectar, applesauce and oil until combined. Add egg mixture to flour mixture, stirring just until combined. Stir in apricots.

Spread batter in an ungreased 11x7x1 1/2' baking pan. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 2 hours and drizzle with Apricot Icing. Cut into 24 bars.

Apricot Icing

In a small bowl, stir together 1/2 C. powdered sugar (triple sifted) and enough apricot nectar or orange juice (2 to 3 t.) to make icing of drizzling consistency.
