RECIPE of the Day - 6/08/2007



















This has the most wonderful lemon flavor. It is just tangy enough, just sweet enough and very refreshing. This is the perfect frozen treat for those really hot days.


Lemonade Pie

1/3 C. Lemonade flavored drink mix (with sugar)
1/2 C. cold water
2 C. vanilla ice cream, softened
1 (8 oz.) tub whipped topping, thawed
1 graham cracker pie crust

Place drink mix in large bowl. Add water; stir until mix is dissolved. Add ice cream and beat with an electric mixer on low speed until well blended. Gently stir in whipped topping. Freeze until mixture is thick enough to mound. Spoon into crust.

Freeze at least 4 hours or overnight until firm. Remove from freezer 15 minutes before serving. Let stand at room temperature until pie can be easily cut into. Store leftover pie in the freezer.

Makes 8 servings.

Note: You can use 1 1/2 C. of crushed shortbread cookies mixed with 1/3 C. melted butter and 3 T. sugar, mixed and pressed into an 8" pie plate to use as the crust instead of a graham cracker crust. Both are delicious.
