RECIPE of the Day - 4/03/2007



This is a very rich and flavorful chicken dish. It makes a wonderful meal when accompanied by almondine rice pilaf and a nice green salad.







Champagne Chicken

2 T. flour
1/2 t. salt
dash pepper
4 boneless skinless chicken breasts
2 T. butter, melted
1 T. olive oil
3/4 C. white wine or champagne
1/4 C. sliced fresh mushrooms
1/2 C. whipping cream

Combine flour, salt and pepper. Lightly dredge chicken in flour. Heat butter and oil in large skillet; add chicken and saute 4 min. on each side. Add wine and cook on medium 12 min. or until chicken is cooked through. Remove chicken and set aside.

Add mushrooms and whipping cream to skillet; cook over low heat, stirring constantly, until thickened. Add chicken and cook until heated.

Makes 4 servings.
