RECIPE of the Day - 4/22/2007



You can't go wrong with macaroni & cheese - it goes with just about everything. This recipe is a step above the normal mac & cheese. Real butter, cream, cheddar cheese and onion - oh, it is sooo good. I know you'll love it as much as we do at our house.

Baked Macaroni & Cheese

8 oz. elbow macaroni
4 T. butter
3/4 C. bread crumbs
1 onion, minced
1 T. flour
1 t. salt
dash pepper
1 1/2 C. cream
2 C. shredded cheddar cheese

Cook macaroni according to package directions and drain well. Heat oven to 350 degrees. Grease 2 qt. casserole and set aside.

In small saucepan over medium heat, melt 2 T. butter; add bread crumbs and toss to coat; set aside. In medium saucepan over medium heat, melt remaining 2 T. butter; add onion and cook until tender, about 5 minutes. Stir in flour, salt and pepper; mix well. Slowly stir in cream; cook until smooth and slightly thickened, stirring constantly. Remove from heat and stir in cheese until melted.

Place macaroni in casserole and pour cheese mixture over macaroni. Sprinkle crumb mixture on top. Bake 20 minutes or until crumbs are golden brown.

Serves 6.
450 calories per 1 cup serving.
