RECIPE of the Day - 4/20/2007

This is a great dish for when you really want Mexican food, but don't have the time to make every little thing to go with it. This is not only really delicious, but easy, quick and family pleasing.




Taco Casserole

1 (14 oz. pkg.) Deluxe Macaroni & Cheese Dinner
1 lb. ground sirloin
1 pkg. taco seasoning mix
3/4 C. water
3/4 C. sour cream
1 1/2 C. shredded colby-jack or pepper-jack cheese
1 C. chunky salsa

Preheat oven to 400 degrees. Prepare macaroni & cheese according to package directions. While macaroni is cooking, brown ground sirloin and drain. Add taco seasoning mix and water to meat; simmer 5 minutes.

Stir sour cream into prepared macaroni & cheese dinner. Spoon half of the dinner mixture into 9" casserole dish; top with layers of the meat mixture, 1 C. of the cheese and remaining dinner mixture. Cover.

Bake for 15 minutes. Top with salsa and remaining 1/2 C. cheese. Bake, uncovered, an additional 5 minutes or until cheese is melted.

Serves 6.
