RECIPE of the Day - 5/08/2007

We really love brussels sprouts and eat them in a variety of ways. This is so good with the bacon, mushrooms and scallions. Serve this as a side dish the next time you make chinese food.

STIR-FRIED BRUSSELS SPROUTS, SHIITAKES AND SCALLIONS

4 slices bacon, cut into 1/4-inch cubes
10 ounces Brussels sprouts, trimmed and sliced vertically
3 ounces shiitake or oyster mushrooms, wiped, stems removed and discarded, cut into thick slices
8 scallions, including most of green parts, trimmed and sliced
2 tablespoons sherry
1 1/2 tablespoons soy sauce
1 tablespoon toasted sesame oil
Pinch red pepper flakes

In large wok, heat bacon over medium heat until fat covers the bottom of pan, 2-3 minutes. Add Brussels sprouts and stir-fry until they are bright green, 2-3 minutes, stirring constantly. Stir in shiitakes and scallions and stir-fry 3 minutes more. Add sherry and soy sauce, raise heat to high, and cook 2 minutes longer, stirring often. Stir in sesame oil and pepper flakes, and serve.

Servings: 4
