RECIPE of the Day - 5/16/2007

These are sooooo good - they have chocolate, they have butter, they have whipping cream...need I say more?!

Golden Walnut Caramel Squares

Crust:
1 c flour
½ c butter
3 T sugar
1/3 c chocolate chips

Filling:
1 1/3 c sugar
1/3 c light corn syrup
1 c butter
1 c whipping cream
2½ c chopped walnuts
1 oz. unsweetened chocolate, melted

Preheat oven to 350° F. To prepare crust, combine flour, ½ c butter and 3 tablespoons sugar in a medium bowl. Mix with a fork until well blended. Press into a lightly greased 9 inch square pan. Prick with a fork and bake until lightly browned, about 15 to 20 minutes. Remove from oven and sprinkle with chips; let stand 2 minutes, then spread chocolate over crust.

To prepare filling, place 1 1/3 c sugar in a heavy saucepan; cook and stir over low heat until melted and caramel colored, about 20 minutes. Stir in corn syrup, 1 cup butter and cream. Cook over medium heat until mixture reaches 240° F. on a candy thermometer. Remove from heat and stir in walnut. Immediately pour over crust, smoothing to make an even layer. Drizzle with melted chocolate and refrigerate until firm. Cut into small squares to serve.
