RECIPE of the Day - 5/22/2007


I love just about everything that is lemony. This is a great quick bread that gives you a subtle lemon flavor with a lemony glaze to top it off. It is really delicious.





Lemon Quick Bread

1 1/2 c. all-purpose flour
1 c. sugar
1 tsp. baking powder
1/2 tsp. salt
2 eggs
1/2 c. cream
1/2 c. butter, melted
1 1/2 tsp. grated lemon peel

Glaze:
1/4 c. lemon juice
1/3 c. sugar

In a large bowl, stir together flour, sugar, baking powder and salt. In a small bowl, beat the eggs with the cream, butter, and lemon peel. Add the liquid mixture to the dry ingredients and mix till just blended. Pour batter into a greased and floured 5 x 9 inch loaf pan. Bake for 40-45 minutes in a 350 degree oven.

About 20 minutes before the bread is finished baking, prepare the glaze. Mix the sugar and lemon juice together in a small saucepan, and heat over medium high heat till the sugar dissolves. Remove from heat.

When the bread is finished baking, poke numerous holes to the bottom of the loaf using a bamboo skewer. Drizzle the hot glaze over the top so it slowly soaks into the bread. Let cool in the plan for 15 minutes; remove from pan and cool on rack.
