RECIPE of the Day - 5/06/2007

This is one of those recipes that is not only delicious, but very quick and easy. When you're pressed for time and want a delicious accompaniment to chicken, beef or pork...voila. The best thing, though is that kids love it.

Broccoli Casserole

2 (9 oz.) packages frozen chopped broccoli
1 can cream of mushroom soup
¾ c mayonnaise
1 c grated Cheddar or Swiss cheese
2 T chopped onion
1 egg
Butter crackers

Cook broccoli as directed on package. Drain and mix with remaining ingredients, except crackers. Put in a casserole dish and top with crumbled Ritz crackers. Bake for 1 hour at 350° F.
